Vanilla Bean Cream
This is a beautiful, thin, custard-like sauce that is a great accompaniment to our Traditional Christmas Pudding. It has a great hit of vanilla thanks to the vanilla sugar that you can find a recipe for in our Make Your Own subscriber bonus issue.

Ingredients
- cream - 600g
- sugar - 50g
- egg yolks - 6
- vanilla sugar - 2 Tbsp
Method
- Place cream (600g), sugar (50g), egg yolks (6) and vanilla sugar (2 Tbsp) into bowl. Program 12 minutes / 90C / Speed 4.
- Allow to cool slightly before pouring into a heatproof jug.
