Vanilla Bean Bites
How good is the smell of fresh vanilla from a vanilla bean? We love using the real deal, and this works particularly well for an LCHF diet as there is all the flavour with no added refined sugar. These bites are great to have on hand in the freezer for a quick snack.

Ingredients
- almonds - 220g, blanched
- coconut oil - 80g
- vanilla pod - 1, seeds only
- xylitol - 2 Tbsp
Method
- Add the almonds (220g), oil (80g), vanilla seeds (from 1 bean) and xylitol (2 Tbsp) to the bowl. Mill Speed 10 / 30 seconds. Scrape down sides and repeat until you have a paste-like consistency.
- Spoon or pour into small bite-size silicone moulds.
- Place into the fridge to set completely until serving.
- These will melt at room temperature, so keep refrigerated until serving.
