
Tuna Mornay Pasta Bake
This yummy dinner has been shared with us by Lesley Collins from Me and My Thermie. Her husband does NOT do tinned tuna. He says "cats eat tuna." So this is a gluten and dairy free quick dinner for her and the kids when he’s away. The sauce makes about 800g, so plenty for a large pasta bake! If you do have any leftover sauce, save it and add to a soup the next day.

Ingredients
- lentils - 30g, dried
- brown rice - 40g
- almonds - 40g, blanched or activated
- onion - 1, peeled and halved
- garlic cloves - 3, peeled
- coconut oil - 20g
- water - 600g
- vegetable stock - 1 Tbsp, paste
- lemon juice - 1 Tbsp (or the juice of 1/2 lemon)
- nutritional yeast flakes - 1 Tbsp
- dried parsley - 1 tsp (or handful of fresh)
- cayenne pepper - pinch
- nutmeg - pinch
- paprika - pinch
- pasta - 300g, gluten free
- salt - to taste
- pepper - to taste
- tuna - 2 x 185g tins (or more, if you wish)
- corn - 350g, frozen or tinned, or mix/match with peas
- Breadcrumbs:
- lemon - 1, zest only
- nutritional yeast flakes - 1 Tbsp
- garlic clove - 1, peeled
- bread - 2 pieces, gluten free
- almonds - some toasted / walnuts / sesame seeds (optional)
- fresh parsley - handful
Method
- Add lentils (30g) and brown rice (40g) to bowl. Program 1 minute / Speed 9.
- Add almonds (40g) to bowl. Speed 9 / 10 seconds. Set aside this grain mix in a small bowl.
- To make breadcrumb topping, add lemon zest (from 1 lemon), nutritional yeast flakes (1 Tbsp), garlic clove (1), bread (2 slices), almonds and parsley (handful) to the bowl. Blitz Closed Lid / Turbo / 5-10 seconds. Set aside in a bowl.
- Add onion (1) and garlic cloves (3) to bowl. Chop Speed 7 / 1-2 seconds.
- Add coconut oil (20g) to the bowl. Program 3 minutes / 100C / Speed 1, measuring cap off.
- Add grain mix, water (600g), stock paste (1 Tbsp), lemon juice (1 Tbsp), nutritional yeast flakes (1 Tbsp), dried parsley (1 tsp), cayenne (pinch), nutmeg (pinch), and paprika (pinch) to bowl. Program 7 minutes / 90C / Speed 4.
- Meanwhile cook the pasta (300g) on the stove.
- Once sauce is cooked, program 1 minute / Speed 9, measuring cap on, gradually increasing speed.
- Test for seasoning and add salt / pepper to taste.
- If too thick, add a little more boiling water and blend on Speed 4.
- Whilst puréeing your sauce, drain your pasta and tip into a large lasagne dish, or two separate ones.
- Add tuna (370g tin) and corn (350g) to the bowl. Mix Reverse+Speed 4 / 5 seconds.
- Spoon the tuna sauce over the pasta and top with the breadcrumbs.
