Sun Dried Tomato Pesto Stir Through Pasta Sauce
This has always been a favourite store bought sauce, and now it's time for you to try it from home. It's super tasty with fantastically fresh ingredients! Blend this sauce to a smoother consistency for a yummy tapenade that you can serve with crackers and cheese.

Ingredients
- garlic cloves - 3, peeled
- sun dried tomatoes - 400g, marinated, in oil, add the oil as well
- olive oil - 50g, good quality
- fresh basil - 1/2 small bunch, leaves only, chopped
- fresh parsley - 1/4 small bunch, leaves only, chopped
- Parmesan cheese - 100g, cubed
- pepper - 1/2 tsp, cracked, black
- salt - 1 tsp
- pasta - cooked, to serve, *ensure GF if required

Method
- Add the peeled garlic cloves (3), marinated sun dried tomatoes and the included oil (400g), olive oil (50g), chopped basil leaves (from 1/2 small bunch), chopped parsley leaves (from 1/4 small bunch), cubed Parmesan cheese (100g), cracked black pepper (1/2 tsp) and salt (1 tsp) to the bowl. Pulse Closed Lid / Turbo / 1 second blasts until you reach a chunky consistency to your liking. You may need to stop and scrape down sides between blasts.
- Serve over cooked pasta of choice.
