Strawberry Rhubarb Jam
Fresh strawberries and rhubarb come together to make a scrumptious jam which is bursting with fruity goodness and flavour. This recipe has been shared with us by Vicki from Thermomix Diva. It is a healthier version made with honey instead of refined sugar, and using chia seeds to help thicken the mixture, making it the perfect jam consistency.

- lemon - 1/2, zest only
- strawberries - 400g, fresh, green ends removed
- rhubarb - 2 stalks, roughly chopped
- honey - 100g
- chia seeds - 20g
- Place lemon zest (from 1/2 lemon), strawberries (400g), rhubarb (2 stalks), honey (100g) and chia seeds (20g) into the bowl and cook for 30 minutes/ 100C / Speed 1, stopping to stir once halfway. Sit the internal steaming basket on top of the lid instead of the measuring cap.
- Pour mixture into a jar and cool before storing in the fridge.
