Sous-Vide Scrambled Eggs
Make decadent, restaurant quality scrambled eggs in your own home with the help of a few fresh ingredients and your thermo mixer. Serve on top of some thick cut sourdough for the easiest dinner ever! Ingredients
- eggs - 4
- cream - 40g
- milk - 10g
- salt - pinch
- butter - 10g, melted
- water - 1.8L, hot tap
- bread - sourdough, to serve, optional* (*omit for GF)
Method
- Insert the whisk attachment. Add the eggs (4), cream (40g), milk (10g) and salt (pinch) to the bowl. Mix Speed 3 / 20 seconds.
- Add the melted butter (10g) to the bowl. Mix Speed 3 / 20 seconds.
- Pour the mixture into a snap lock bag. Ensure that you have removed all air, then seal the bag and set aside.
- Add hot tap water (1.8L) to the bowl. Set the internal steaming basket in place. Program 10 minutes / 80C / Speed 2, measuring cap on. When the mixer reaches 80C, place the bag with the egg mixture into the internal steaming basket and stop the timer.
- Program 4 minutes / 80C / Speed 2, measuring cap on. Stop the machine to quickly and carefully give the egg mixture in the bag a light massage before returning the bag to the internal steaming basket.
- Program 5 minutes / 80C / Speed 2, measuring cap on. Stop the machine to quickly and carefully give the egg mixture in the bag a light massage before returning the bag to the internal steaming basket.
- Program 4 minutes / 80C / Speed 2, measuring cap on.
- Give the bag a final massage then cut the bag and serve.
