Soft Roasted Capsicum & Basil Butter
No: Gluten / Egg / Nuts
- capsicum - 40g, roasted, strips
- fresh basil - 20, leaves
- salt - 1/2 tsp
- garlic clove - 1/2, peeled
- butter - 1/2, plain
- Place roasted capsicum (40g), basil (20), salt (1/2 tsp) and garlic (1/2 a clove) into bowl. Speed 7 / 5 seconds. Scrape down sides.
- Add butter (1/2). Speed 5 / 5 seconds until combined.
- Roll into a small log and wrap in clingwrap.
- Store in the fridge to firm. This will be a softer butter.
