Smashed White Beans, Avocado and Tomatoes on Crackers
A really nice, quick and easy lunch. It really does only take five minutes and will be enjoyed by adults and children alike. You can easily double the recipe if you are serving to more people.

Ingredients
- crackers - 2, sandwich sized (*can use GF)
- avocado - 1/2, peeled and diced
- cherry tomatoes - 10, halved
- salt
- pepper
- White bean mash:
- cannellini beans - 100g, or berlotti beans
- fresh parsley - 1 Tbsp
- olive oil - 10g
- lemon juice - squeeze
- salt flakes - pinch
- pepper - cracked black, to taste
Method
White bean mash:
- Add the cannellini beans (100g), fresh parsley (1 Tbsp), olive oil (10g), lemon juice (squeeze), salt (pinch) and cracked black pepper to the bowl. Pulse Closed Lid / Turbo / 2 x 1 second blasts.
Assembly:
- Spread bean mash over crackers (2) and top with diced avocado (1/2) and halved cherry tomatoes (10). Season with additional salt and pepper if needed.
- Enjoy!
