
Seasoned Chicken with Sumac Tomato Salad
A great salad to bring to your next BBQ that is a little different to the usual coleslaw or potato salad. The chicken is also perfect served alongside steamed vegetables instead of the salad, for a cooler weather option.

You will need:

Ingredients
- Chicken:
- sumac - 1 Tbsp
- paprika - 1 tsp
- garlic powder - 1 tsp
- dried onion flakes - 1 Tbsp
- dried oregano - 1 tsp
- salt - 1 tsp, rock
- olive oil - 30g
- chicken breast - 4, whole
- Salad:
- tomato - 400g, multicoloured, baby, halved
- fresh basil - 20 leaves, shredded
- onion - 1/2, red, peeled and thinly sliced
- sumac - 1 Tbsp
- salt - 1 tsp, rock
- olive oil - 30g
- lemon juice - 60g
- Serving options:
- vegetables of choice - steamed, to serve
Method
Chicken:
- Add the sumac (1 Tbsp), paprika (1 tsp), garlic powder (1 tsp), dried onion flakes (1 Tbsp), dried oregano (1 tsp) and rock salt (1 tsp) into the bowl. Chop Speed 7 / 6 seconds.
- Add the olive oil (30g) to the bowl. Mix Speed 5 / 4 seconds.
- Pour the mixture over the chicken breasts (4) and coat well.
- Allow to marinate for 30 minutes.
Salad:
- Place the halved baby tomatoes (400g), shredded basil leaves (20) and thinly sliced red onion (1/4 only) into a serving bowl.
- Place the remaining red onion (1/4) into the mixer bowl. Chop Speed 7 / 3 seconds. Scrape down sides.
- Add the sumac (1 Tbsp), rock salt (1 tsp), olive oil (30g) and lemon juice (60g) to the bowl. Mix Speed 5 / 10 seconds.
- Add to the serving bowl and combine well.
- Place into the fridge to develop flavours whilst cooking the chicken.
Assembly:
- Place a large grill pan over medium to high heat on the stove.
- Drizzle with a little olive oil.
- Grill chicken for approximately 6-8 minutes on each side, until cooked through.
- Slice each breast diagonally into slices and serve alongside salad.
