Raw Strawberry Lime Macadamia Slice
This delicious and easy no bake slice has been shared with us by Shanai from Kids Eat by Shanai. No refined sugars, no flour and no dairy make this great for a share plate for those with dietary intolerances. Keep this one in the freezer until serving.

You will need:
22cm square cake tin
baking paper
knife

Ingredients
- Base:
- dates - 8, Medjool, pitted
- strawberries - 100g, chopped
- macadamia nuts - 280g, roughly chopped
- coconut oil - 45g, melted
- chia seeds - 15g
- desiccated coconut - 35g
- vanilla - 1 tsp, extract
- water - 20g, if needed
- Top:
- macadamia nuts - 140g
- coconut oil - 100g, melted
- maple syrup - 170g
- lime juice - 80g
- vanilla - 1 tsp, extract
Method
Base:
- Line a square cake tin with baking paper.
- Add the pitted dates (8) to the bowl. Mix Speed 8 / 10 seconds.
- Add the chopped strawberries (100g), macadamia nuts (180g only), melted coconut oil (45g), chia seeds (15g), desiccated coconut (35g) and vanilla extract (1 tsp) to the bowl. Blitz Speed 8 / 20 seconds.
- The mixture should stick together like a dough; if not, add some extra water (20g) and blend a further Speed 8 / 10 seconds.
- Add the remaining roughly chopped macadamia pieces (100g). Combine Reverse+Speed 4 / 5 seconds. This allows some yummy macadamia pieces to create a great texture.
- Transfer the mixture to the lined tin and press down evenly to form a base, then place in the freezer to set.
Top:
- Wash and dry the mixer bowl.
- Add the macadamia nuts (140g), melted coconut oil (100g), maple syrup (170g), lime juice (80g) and vanilla extract (1 tsp) to the bowl. Program 1 minute / Speed 8, until smooth and creamy.
- Remove the tin from the freezer and pour the top mixture over, then return to the fridge or freezer.
- Once the top is firm, cut into 25 squares and store in the fridge or freezer.
