
Prawn Fritters with Spicy Mayonnaise
These Prawn Fritters are a great starter or party snack for all the seafood lovers out there, especially over the Easter period. Serve them with spicy mayonnaise and you have the perfect double act! The prawns are juicy and surrounded by a crispy layer of batter, which makes them ideal for dipping. The spicy mayonnaise can easily be stored in the fridge for a couple of days and used to spread on toast or dip some veggies into as a light lunch.

Ingredients
- Spicy mayonnaise:
- sunflower oil - 250g
- egg - 1
- apple cider vinegar - 1 tsp
- mustard - 10g, wholegrain
- pepper - pinch, black
- salt - 1/2 tsp
- cayenne pepper - 1/2 tsp
- turmeric - 1/2 tsp
- Prawns:
- prawns - 16, unpeeled, raw
- besan / chickpea flour - 60g
- plain flour - 60g (*can use GF)
- salt - 1/2 tsp
- egg - 1
- water - 150g
- ghee - 75g
- lemon - 1, quartered
Method
- Weigh out oil (250g) into a pourable jug.
- Add the egg (1), apple cider vinegar (1 tsp), mustard (10g), black pepper (pinch), salt (1/2 tsp), cayenne (1/2 tsp) and turmeric (1/2 tsp) to the bowl. Program 1:30 minutes / Speed 4. Whilst blending, very slowly add the oil (250g) in a very thin stream to the mixing bowl.
- Place into a bowl and leave in the fridge until later.
- For the prawns, shell and devein, leaving the tail attached. Slice along the bottom, remove the black intestine and then cut deeper and butterfly the prawns. Set aside.
- For the batter, add the chickpea flour (60g), plain flour (60g), salt (1/2 tsp), egg (1) and water (150g) to the clean dry bowl. Mix Speed 2-3 / 30 seconds.
- Pour into a bowl. Heat the ghee (75g) in a large frying pan until hot.
- Dip each prawn into the batter and then place inside the frying pan. Fry for 2-3 minutes, turning occasionally.
- Remove from the pan and pat dry with kitchen towel. Serve immediately with the lemon wedges and spicy mayonnaise.
