Pear and Ginger Cobbler
When we think of comforting desserts, cobbler always comes to mind. Soft, ripe, warm fruit with a deliciously crunchy topping – it's a great combination! We love this served with cream, custard or ice cream for a really indulgent dessert.

Ingredients
- ginger - 1.5 tsp, ground
- vanilla - 1 tsp, extract
- water - 80g
- brown sugar - 35g
- pears - 6, soft, ripe
- cream - or custard, or ice cream, to serve
- Cobbler topping:
- self raising flour - 125g (*can use GF)
- butter - 125g, melted
- brown sugar - 70g
- almonds - 80g, slivered
- coconut - 20g, shredded
- vanilla - 1 tsp, extract
Method
- Preheat the oven to 180C.
- Add the ginger (1.5 tsp), vanilla (1 tsp), water (80g) and brown sugar (35g) to the bowl. Program 8 minutes / Steaming Temperature / Speed 2, measuring cap off.
- While the syrup is cooking, peel and cube pears (6) and place them into a casserole dish.
- Pour syrup over the pears. There is no need to wash the bowl out for the next step.
Cobbler topping:
- Add self raising flour (125g), butter (125g), sugar (70g), almonds (80g), coconut (20g) and vanilla (1 tsp) to the bowl. Mix Speed 3 / 6 seconds.
- Spoon cobbler dough over the top of the pears.
- Bake for 25-35 minutes of until cobbler topping is golden and crunchy.
- Serve with cream, custard or ice cream.
