Pea and Ham Soup
If your favourite part of Pea and Ham Soup is the ham, this soup is for you. It's heavy on the ham, and we love it like that! It fills the whole bowl of the thermo mixer with soup, and can be adjusted for newer and older thermo mixer models. If you are using a newer model with increased capacity you may wish to add a bit more stock. Having said that, you can always start with less stock and add more to taste toward the end. Remember that the ham will add salt, so you may like to adjust according to your taste.

Ingredients
- onions - 2, peeled and quartered (approx 180g)
- garlic cloves - 2, peeled
- carrots - 2, roughly chopped (approx 160g)
- olive oil - 10g
- peas - 250g, dried green split
- vegetable stock - 45-60g, paste
- ham - 1, large, or bacon hock (tested with 1.2kg, but can be altered up or down as long as it fits in the lower dish of the steaming attachment)
- water - to fill
Method
- Add onions (2), garlic (2 cloves) and carrots (2) to the bowl. Chop Speed 6 / 4 seconds. Scrape down sides.
- Add oil (10g). Program 5 minutes / 115C* / Stirring Speed.
- Sit the steaming basket on top of the lid and set the scales. Weigh the peas (250g).
- Rinse the peas until the water runs clear.
- Add the peas to the bowl.
- Fill the bowl to the max line with water.
- Add stock paste (45-60g).
- Sit the hock in the lower dish of the steaming attachment and set in place.
- Program 60 minutes / Steaming Temperature / Speed 2.
- Remove the steaming attachment carefully before removing the skin of the hock (as pictured). Discard the skin.
- Refill the bowl to the max line with water.
- Return the steaming attachment with skinned ham hock to position above the mixture.
- Program 60 minutes / Steaming Temperature / Speed 2.
- Remove the steaming attachment carefully before removing the meat from the ham hock and chop into bite sized pieces. You can discard any fat, or include it, according to your personal preference.
- Add ham pieces to the bowl.
- Refill bowl with water to the max line.
- Program 20 minutes / 100C / Reverse+Speed 1, with the measuring cap on.
- Serve.
*If your machine does not go above 100C, set to Steaming Temperature which is usually between 110-115C. Please refer to your user manual for correct information for the appropriate setting for your machine.
