Moroccan Seasoning
Moroccan seasoning is a commonly storebought spice blend that is easily replicated at home without the added anti-caking agents and thickeners. This is delicious when rubbed over lamb or beef and left to marinate for a few hours before roasting or grilling.

You will need:

Ingredients
- cumin - 1 Tbsp, ground
- paprika - 2 Tbsp, sweet
- allspice - 2 tsp
- ginger - 1 tsp, ground
- cayenne pepper - 1.5 tsp
- cinnamon - 1 tsp, ground
- cloves - 1 Tbsp, whole
- salt - 2 tsp, rock
- peppercorns - 2 tsp, black
Method
- Add the ground cumin (1 Tbsp), sweet paprika (2 Tbsp), allspice (2 tsp), ground ginger (1 tsp), cayenne pepper (1.5 tsp), ground cinnamon (1 tsp), whole cloves (1 Tbsp), rock salt (2 tsp) and whole black peppercorns (2 tsp) to the bowl. Program 1 minute / Speed 10.
- Place into an airtight jar and store for up to 6 months.

Note: Do not freeze this spice blend if it will be used regularly, as the continuous opening of the container can lead to loss of flavour, freezer burn and condensation buildup. Freeze until needed, then store in an airtight jar to use regularly if desired.
