Mini Lamb Koftas with Tzatziki
These yummy little koftas make for a fantastic catering option. You can prepare the mince mixture and the tzatziki ahead of time – simply cook the koftas before serving with the tasty tzatziki sauce. We know they will be a crowd pleaser.

You will need:

Ingredients
- Koftas:
- fresh parsley - 1/4 bunch, leaves only, chopped
- fresh mint - 1/2 bunch, leaves only
- onion - 2, peeled and quartered
- garlic cloves - 4, peeled
- lemon - 2 strips, peel
- cumin - 3 tsp, ground
- dried coriander - 3 tsp, ground
- salt - 1 tsp
- pepper - 1 tsp, cracked, black
- lamb mince - 1.5kg
- Tzatziki:
- garlic cloves - 2, peeled
- fresh mint - 2 Tbsp, leaves
- fresh dill - 2 Tbsp, chopped
- cucumber - 2, halved and flesh removed with a spoon
- yoghurt - 500g, Greek
- sea salt - 1 tsp
- pepper - 1 tsp, cracked, black
Method
Koftas:
- Add the chopped parsley leaves (from 1/4 bunch) and mint leaves (from 1/2 bunch) to the bowl. Chop Speed 7 / 1 second. Scrape down sides.
- Add the peeled and quartered onions (2), peeled garlic cloves (4) and lemon peel (2 strips) to the bowl. Chop Speed 7 / 3 seconds. Scrape down sides.
- Add the ground cumin (3 tsp), ground coriander (3 tsp), salt (1 tsp), cracked black pepper (1 tsp) and lamb mince (750g only) to the bowl. Begin to mix on Speed 8, adding more mince (1.5kg total) in through the hole in the lid until the mixture is well combined. You may need the help of your spatula to combine the mixture.
- Move the mixture from the mixer bowl onto a plate.
- Divide the mixture into quarters, then divide each quarter into 9 pieces so that there are 36 portions in total.
- Roll one portion into a thick sausage shape and place onto a large baking tray lined with baking paper.
- Repeat for all koftas and refrigerate for 2 hours.
- Soak 36 mini wooden skewers in water.
- Work one portion of mince around the end of one skewer. Leave room to use the remaining skewer as a handle.
- Repeat for all koftas.
- Fire up the BBQ or grill pan over high heat.
- Cook koftas for 10 minutes or so, turning often, until cooked through.
Tzatziki:
- Add the peeled garlic cloves (2), fresh mint leaves (2 Tbsp) and fresh chopped dill (2 Tbsp) to the bowl. Blitz Speed 7 / 4 seconds. Scrape down sides.
- Add the deseeded cucumbers (2) to the bowl. Blitz Speed 5 / 4 seconds. Scrape down sides. Repeat if necessary and scrape down sides again.
- Add the Greek yoghurt (500g), sea salt (1 tsp) and cracked black pepper (1 tsp) to the bowl. Mix Reverse+Speed 3 / 10 seconds.
- Serve koftas with tzatziki.
