What soft little bites of no-nutty deliciousness! These cookies give a nutty taste without using any nuts. This makes them a perfect healthy treat for school lunchboxes.

Ingredients
- pepitas - 75g
- sunflower kernels - 130g
- linseeds - 40g
- xylitol - 140g, or sugar, can use less if preferred
- cacao powder - 40g
- eggs - 2
- butter - 100g
- vanilla - 1 Tbsp, extract
Method
- Preheat the oven to 180C. Line a baking tray with baking paper.
- Add the pepitas (75g), sunflower kernels (130g), linseeds (40g), xylitol (140g) and cacao (40g) to the bowl. Blitz Speed 10 / 30 seconds.
- Add the eggs (2), butter (100g) and vanilla extract (1 Tbsp) to the bowl. Mix Speed 7 / 10 seconds.
- Spoon out teaspoon sized portions of mixture onto a baking tray.
- Bake for 12-15 minutes.
