Mince and Veggie Spaghetti Bake
Love lasagne but want something just a little quicker that the kids will LOVE? Anything with white sauce is always a hit. There are lots of yummy veggies hidden in this - so great for children! And which child doesn’t love slurping up spaghetti when Mum or Dad aren’t looking? This tastes even better the next day so it's great that it's big enough for leftovers. Serve as is or with salad and garlic bread for a complete meal. Check out the bottom of the recipe for handy freezer tips.

Ingredients
- dried spaghetti - 200g, or pasta of choice (*ensure GF / EF if required)
- cheese - 100g, grated, to top
- Meat sauce:
- garlic cloves - 2, peeled
- onion - 1, peeled and quartered
- olive oil - 20g
- celery - 1, stick, chopped
- carrot - 2, chopped
- zucchini - 1, large, chopped
- bacon - 4, rashers, diced
- beef mince - 400g, good quality
- tomato paste - 170g
- beef stock - 1 cube or 1 tsp of beef stock paste
- Worcestershire sauce - 2 (make your own using the Worcestershire Sauce recipe from the Make Your Own Subscriber Bonus Issue, *use GF or omit if required)
- salt - to taste
- pepper - to taste
- White sauce:
- garlic powder - 1 tsp
- mustard powder - 1 tsp
- milk - 500g
- butter - 50g
- plain flour - 50g
- salt - to taste
- pepper - to taste
- cheese - 50g, grated
Method
- Cook pasta according to directions on packet. Drain and place in the bottom of a large casserole dish.
- If you need to grate your own cheese, add small blocks of cheese (150g) and grate Speed 8 / 5 seconds. Set aside.
Meat sauce:
- Place garlic cloves (2) and onion (1) into mixer bowl. Blitz Speed 7 / 1 second. Scrape down sides.
- Add olive oil (20g) to the bowl. Program 5 minutes / 100C / Speed 2.
- Add celery stick (1), carrots (2) and zucchini (1) to the bowl. Blitz Speed 7 / 5 seconds. Scrape down sides.
- Repeat Speed 7 / 5 seconds. Scrape down sides.
- Add diced bacon (4 rashers) and mince (400g) to the bowl. Program 5 minutes / 100C / Reverse+Stirring Speed.
- Add tomato paste (170g), stock cube (1) and Worcestershire sauce (2 Tbsp). Add salt and pepper to taste. Program 12 minutes / 100C / Reverse+Stirring Speed. Don't worry if there are any clumps, as these will cook through in the oven.
- Pour over the top of the pasta. Clean the mixer bowl. Preheat the oven to 180C.
White sauce:
- Add garlic powder (1 tsp), mustard powder (1 tsp), milk (500g), butter (50g) and flour (50g) to the bowl. Add salt and pepper to taste. Program 12 minutes / 90C / Speed 4.
- Add cheese (50g) to the bowl. Program 2 minutes / 90C / Speed 4. Pour over mince layer.
- Top with grated cheese (100g) and bake until golden, approx. 20-30 minutes.
