Mediterranean Hummus
A delicious hummus with a taste of the Mediterranean. This is perfect for your next get-together with friends as it takes no time at all to whip up and serves a crowd. You will need:

Ingredients
- Hummus:
- chickpeas - 400g tin, drained (reserve 1 Tbsp for garnish)
- tahini paste - 120g
- cumin - 1 tsp
- olive oil - 60g
- fresh coriander - 2-3 sprigs
- garlic clove - 1, peeled
- salt - 1 tsp
- garam masala - 1/4 tsp
- lemon - 1/2, juice only
- salt
- pepper
- To garnish:
- sumac
- chickpeas - 1 Tbsp (reserved from the tin of chickpeas)
- pepper - black
- chilli flakes
- chilli oil
- fresh coriander - 2-3 sprigs
- Serving options:
- pita bread - warm, to serve
Method
- Add the drained chickpeas (400g tin), tahini (120g), cumin (1 tsp), olive oil (60g), fresh coriander (2-3 sprigs), peeled garlic clove (1), salt (1 tsp), garam masala (1/4 tsp) and lemon juice (from 1/2 lemon) to the bowl. Combine Speed 8 / 10 seconds. Scrape down sides.
- Repeat Speed 8 / 10 seconds. Continue processing until your preferred texture has been reached.
- If you find that the hummus is still a bit dry, add more olive oil and tahini. Season with salt and pepper to taste.
- Top with garnishes of choice.
