Lemon Slice
Most of us have a tin of condensed milk in the cupboard that has been there forever and a day. This yummy slice and the delicious Super Simple Passionfruit Ice Cream on the next page really make the most of a tin of condensed milk. Add in a pack of plain biscuits, coconut and lemon and here's a yummy treat that you can whizz up without having to duck down to the shops!

Ingredients
- biscuits of choice - 250g, shortbread or plain
- condensed milk - 390g, tin, sweetened
- desiccated coconut - 100g
- lemon - 1, medium, zest and juice only
- Icing:
- icing sugar - 300g, pure
- lemon - 1, medium, zest and juice only
Method
- Grease and line a 20x20cm square cake tin with baking paper so that the edges hang over for easy removal of the slice.
- Place biscuits (250g) into the bowl. Mix Speed 7 / 10 seconds. Scrape down sides if needed.
- Add condensed milk (390g tin), coconut (100g), lemon juice (from 1 lemon) and lemon zest (from 1 lemon) to the bowl. Mix on Speed 7 until it comes together into a dough.
- Transfer the mixture into the tin and press down to compress.
- Meanwhile, wash and dry bowl.
- Add icing sugar (300g) and lemon juice (from 1 lemon) to the bowl. Insert the whisk attachment. Mix 1 minute / Speed 4.
- Pour over slice.
- Sprinkle lemon zest over the slice.
- Refrigerate for several hours before serving. Remove from cake tin and slice into 5cm squares (16) or for a small bite cut into 2.5cm squares (32) before serving.
