
Grilled Mexican Beef Rump and Easy Corn Salad
A delicious meal fit for any lover of Mexican food! A delicious, quick and easy BBQ dinner. Perfect for busy weekdays! The corn salad is great for taking to parties, and the seasoning can be made in advance or even given as a gift.

Ingredients
- rump steak - 4
- lime - 1/2, juice only
- oil - 30g
- Seasoning:
- chilli powder - 1/2 tsp, mild
- garlic powder - 1 Tbsp
- dried onion flakes - 1.5 Tbsp
- paprika - 2 tsp, sweet
- cumin - 2.5 tsp, seeds
- dried coriander - 1 tsp, ground
- salt - 1 tsp, rock
- peppercorns - 1.5 tsp, whole
- Salad:
- corn - 400g tin, kernels, drained
- capsicum - 1, red, deseeded and diced finely
- onion - 1, red, peeled and diced finely
- cucumber - 1, sliced and quartered
- avocado - 1, cubed
- baby spinach - 80g, leaves
- fresh coriander - 1/2 bunch, chopped finely
- salt - 1 tsp
- pepper - 1/2 tsp, cracked
- lime - 1/2, juice only
Method
Seasoning:
- Add the chilli powder (1/2 tsp), garlic powder (1 Tbsp), onion granules (1.5 Tbsp), sweet paprika (2 tsp), cumin seeds (2.5 tsp), ground coriander (1 tsp), rock salt (1 tsp) and whole peppercorns (1.5 tsp) to the bowl. Program 1 minute / Speed 10. Set aside in an airtight jar.
Marinade:
- Place the steaks (4), 1-2 Tbsp of seasoning to taste, lime juice (from 1/2 lime) and oil (30g) into a large bowl. Combine well to coat meat in seasoning.
- Allow to sit for 15 minutes whilst preparing the salad.
Salad:
- Add the drained corn (400g tin), diced capsicum (1), diced red onion (1), sliced and quartered cucumber (1), cubed avocado (1), baby spinach leaves (80g), chopped coriander (1/2 bunch), salt (1 tsp), cracked pepper (1/2 tsp) and lime juice (from 1/2 lime) into a large bowl. Stir to combine well. Allow to sit whilst cooking the steaks.
Steaks:
- Fire up the BBQ to a high heat. Cook steaks for 8-10 minutes until cooked to your liking.
- Serve steaks alongside the corn salad.
