Gluten Free Banana and Date Crumble
A delicious dessert for those avoiding gluten. The combination of banana, vanilla and dates gives this crumble an almost caramel-like flavour.

Ingredients
- banana - 6, peeled and sliced
- dates - 8, finely chopped
- vanilla - 2 tsp, extract
- Crumble:
- almonds - 100g, or macadamia nuts
- maple syrup - 80g, or honey
- coconut oil - 30g, solid
- cinnamon - 1 tsp
- nutmeg - 1 tsp
- vanilla - 2 tsp, extract
- almonds - 100g, flaked
Method
- Preheat the oven to 180C. Grease a small pie dish with butter or oil.
- Place the sliced bananas (6) into the dish. Top with chopped dates (8) and vanilla extract (2 tsp).
Crumble:
- Add almonds (100g) to the bowl. Chop Speed 9 / 4 seconds.
- Add the maple syrup (80g), coconut oil (30g), cinnamon (1 tsp), nutmeg (1 tsp) and vanilla extract (2 tsp) to the bowl. Combine Speed 4 / 5 seconds, or until mixed through.
- Add flaked almonds (100g) to the bowl. Mix through gently with a spoon.
- Sprinkle the crumble mixture on top of the banana slices with your fingers – this may require rubbing your fingers together to separate the crumble mixture.
- Place into the oven and bake for 20-30 minutes or until topping is golden.
