
Dried Apricot Preserves
This may well be the easiest jam ever, and it's so delicious. It is from Tenina Holder's book Merry Christmix Too. You will just love giving little jars of this away as personal gifts. Of course, you will also love slathering it all over your Apricot Glazed Christmas Ham!

Makes 2 medium jars
Cannot be frozen
Ingredients
- dried apricots - 400g
- water - 370g
- sugar - 250g
- lemon juice - 100g, fresh
Method
- Place apricots (400g), water (370g), sugar (250g) and lemon juice (100g) into bowl. Program 30 minutes / 90C / Reverse+Speed 1.
- Pour into hot sterilised jars and allow cool.
- Try not to eat it all on the first sitting!
Note: If you like it a little less thick, add extra lemon juice after cooking and testing, then cook for a further 5 minutes.
