Cottage Pies with Sour Cream Mash
I love love love anything topped with mashed potato. This is a delicious pie packed full of veggies and perfect for those cold nights. For me this is total comfort food. To keep this dinner quick we have cooked the potato separately on the stove. - Peta

Ingredients
- Mash:
- potatoes - 600g, peeled and diced
- sour cream - 100g
- salt - to taste
- pepper - to taste
- fresh chives - 1 Tbsp, chopped
- Mince mixture:
- beef mince - 500g
- onion - 1, peeled
- garlic cloves - 2, peeled
- olive oil - 10g
- carrot - 1, roughly chopped
- celery - 1, stalk, roughly chopped
- zucchini - 1, small, roughly chopped
- beef stock - 300g, good quality
- tomato paste - 50g or 2 Tbsp
- Worcestershire sauce - 40g or 2 Tbsp
- salt - to taste
- pepper - to taste
- peas - 100g, frozen
Method
- Preheat oven to 180C.
- Place diced potatoes (600g) into a large saucepan filled with water. Bring to the boil and cook for 20 minutes until cooked through.
- Place carrot (1), celery (1 stalk), and zucchini (1 small) into bowl. Chop Speed 7 / 5 seconds.
- Place the chopped vegetables into a separate bowl and set aside.
- Place onion (1) and garlic cloves (2) into bowl. Chop Speed 7 / 5 seconds.
- Add oil (10g). Program 5 minutes / 115C* / Speed 2.
- Add vegetables, stock (300g), Worstershire sauce (40g) and tomato paste (50g) to bowl and season with salt and pepper.
- Insert simmering basket into bowl. Place broken up mince (500g) into it. Program 10 minutes / 100C / Speed 2.
- Add peas (100g) and stir to combine with a spatula. Do not worry if your mince isn't completely cooked and may have excess liquid as it will continue cooking in the oven.
- Meanwhile, drain the cooked potatoes and place into a bowl. Add sour cream (100g), chives (1 Tbsp) and salt and pepper to taste. Mash potatoes by hand for a textured result.
- Place mince into a mini casserole dishes until almost full. Spoon or pipe potato mash onto mince mixture.
- Bake for 15-20 minutes until bubbling hot and mash potato has turned a slight golden colour.
* If your machine does not go above 100C, set to Steaming Temperature which is usually between 110-115C. Please refer to your user manual for correct information for the appropriate setting for your machine.
Note:
You can top your pies with cauliflower, sweet potato, pumpkin or mixed veggie mash if you prefer.
