Chicken Skewers with Satay Sauce

This Chicken Satay recipe is a great example of Steph's style of cooking - simple recipes done very well.

Makes 24 skewers
Serves 6-8 people.
Can be frozen but best served fresh.
Ingredients
- shallots - 4 small, brown Asian
- lemongrass - 1 stalk, white part only
- garlic cloves - 3, peeled
- peanut oil - 1 Tbsp
- peanuts - 180g, raw unsalted, husks removed
- tamarind paste - 1 Tbsp (*can use GF version)
- sambal olek - 1 tsp (*can use GF version)
- kecap manis - 4 Tbsp (*can use GF version)
- coconut cream - 400g tin
- chicken stock - 1 Tbsp, paste
- water - 100g
- chicken tenderloins - 500g, cut in half lengthwise
Method
- Put shallots (4), lemongrass (1 stalk), garlic cloves (3), and peanut oil (1 Tbsp) into bowl. Chop Speed 7 / 4 seconds. Scrape down sides.
- Program 5 minutes / 110C* / Speed 1.
- Add peanuts (180g), tamarind paste (1 Tbsp), sambal olek (1 tsp), kecap manis (3 Tbsp only), coconut cream (400g), chicken stock paste (1 Tbsp), and water (100g). Mix Speed 3 / 10 seconds.
- Program 5 minutes / 110C* / Speed 1.
- While the sauce is heating, thread half a chicken tenderloin onto each skewer. Some of the skewer ends will need to be shortened with scissors to fit into the steaming attachment. Use a sharp pair of scissor to shorten them.
- Place chicken skewers into the steaming attachment lower dish and upper tray.
- Using a pastry brush, coat the chicken skewers with the remaining kecap manis (1 Tbsp) and then place them into the steaming attachment upper tray. Set steaming attachment in place.
- Program 15 minutes / Steaming Temperature / Speed 2.
- Blend Speed 9 / 40 seconds.
- Serve with sauce poured all over the chicken skewers.
*If your machine does not go above 100C, set to Steaming Temperature which is usually between 110-115C. Please refer to your user manual for correct information for the appropriate setting for your machine.
