Cheat’s Apple Danishes
It wouldn't be brunch without some sort of Danish or pastry treat, but who has time to whip up their own pastry? This is our take on apple ricotta Danishes – we may have cheated a little by using store-bought puff pastry, but we think they taste delicious nonetheless.

You will need:
2 baking trays
baking paper
peeler
knife
chopping board
spatula
2 small bowls
whisk or fork
pastry brush
Ingredients
- puff pastry - 3 sheets
- egg - 1, lightly beaten
- caster sugar - 20g
- Apple filling:
- apple - 4, large, red, peeled, cored and quartered
- vanilla - 1 tsp, extract
- cinnamon - 1/2 tsp, ground
- brown sugar - 20g
- butter - 50g, cubed
- Ricotta filling:
- ricotta cheese - 250g
- honey - 30g
- vanilla - 1 tsp, extract
Method
- Preheat the oven to 200C. Line two baking trays with baking paper.
- If you need to grind your own caster sugar, add raw sugar (20g) to the bowl and grind Speed 9 / 3 seconds. Set aside.
Apple filling:
- Add the peeled, cored and quartered apples (4) to the bowl. Chop Speed 4 / 4 seconds. If required, repeat the chopping. Scrape down sides.
- Add the vanilla extract (1 tsp), ground cinnamon (1/2 tsp), brown sugar (20g) and cubed butter (50g) to the bowl. Program 6 minutes / 100C / Reverse+Speed 1, measuring cap off.
- While the apple is cooking, make the ricotta filling.
Ricotta filling:
- In a small bowl, add the ricotta cheese (250g), honey (30g) and vanilla extract (1 tsp). Stir to combine.
Assembly:
- Cut each sheet of puff pastry (3) into 4 squares.
- Spread the ricotta filling over the pastry squares, leaving a 1cm border around the edge to allow the pastry to puff up.
- Top with the apple filling.
- Bring two opposite corners inward over the filling, so that they overlap in the centre.
- Place the Danishes onto the prepared trays. Brush the pastries with a beaten egg (1) and sprinkle with a little caster sugar (20g total).
- Bake for 15-20 minutes or until golden.
- Serve immediately or allow to cool.
