This is a simple icing recipe that can be ready in just a couple of minutes. It goes beautifully with the Vanilla Bean Cupcakes in this issue.

No: Gluten / Egg / Nuts
Preparation Time 5 minutes
Makes 1 cup of icing
Cannot be frozen
- Place butter (100g) into bowl. Blitz on Speed 5 / 20 seconds. Scrape down sides.
- Insert whisk attachment.
- Add half (200g) of the icing sugar and half (25g) of the milk. Speed 4 / 30 seconds.
- Add remaining icing sugar (200g), milk (25g) and food dye. Program 1 minute / Speed 4.
Note: If you feel the icing mixture is too stiff, add a little more milk until you get your preferred consistency. It tends to vary each time due to weather, humidity etc.
