Almond Meringue Cake

Ingredients
- Meringue:
- egg whites - 4
- icing sugar - 160g
- Cake:
- sugar - 125g
- butter - 125g
- egg yolks - 4
- vanilla bean paste - 1 tsp
- milk - 60g
- self raising flour - 120g
- almonds - 60g, flaked
- caster sugar - 1 Tbsp
- cinnamon - 1/2 tsp
- Cream filling:
- cream - 300ml, whipped
- vanilla bean paste - 1 tsp
- strawberries - to decorate
Method
Meringue:
- Preheat oven to 180C. Line cake tins with baking paper.
- Place egg whites (4) into the bowl and whip by programming 4 minutes / Speed 3. After 2 minutes, begin Step 3.
- Add in icing sugar (160g) a little bit at a time through the lid until finished. Set mixture aside.
Cake:
- Place sugar (125g) into the bowl and mill Speed 9 / 10 seconds.
- Add butter (125g), egg yolks (4), vanilla (1 tsp), milk (60g) and flour (120g) and mix Speed 6 / 20 seconds. Scrape down the sides of bowl.
- Mix again for Speed 6 / 5 seconds.
- Place cake mixture into prepared tins and spread the mixture evenly.
- Add the meringue mixture on top of the cake mixture and again, spread evenly.
- Sprinkle the almond flakes (60g) on to the top of the meringue.
- Combine the sugar (1 Tbsp) and cinnamon (1/2 tsp) and sprinkle over the meringue and almonds.
- Place cake into the oven and cook for 30 mins or until golden brown.
- Cool the cake completely before assembly.
Cream filling:
- Insert whisk attachment into the bowl and whip the cream (300ml) and vanilla (1 tsp) Speed 4 / 20 seconds or until soft peaks form.
- Put some sliced strawberries and cream on top of one cake (i.e. your cake middle) then place the other cake on top.
- Decorate the top with cream and strawberries then finish with some icing sugar on the top.
